It takes a town to raise a child‚ and some might say the same about making kimchi‚ a process that usually involves the whole family.
Kimjang‚ the process of making kimchi‚ begins with a trip to the grocery store.
It takes 20 heads of cabbage‚ 10 radishes‚ eight kilograms of salt and two kilograms of red pepper powder for one batch -- based on a family of four.
As it's a significant event for Koreans‚ so much so that the price of ingredients is a hot topic this time of the year. And this year‚ there is good news.
"It costs Koreans less to make kimchi this year compared to the previous years -- thanks to strong cabbage and other vegetable harvests."
According to the agriculture ministry's 'Kimchi Index‚' which was released for the first time last week‚ it will cost slightly less than 180 dollars this year to make kimchi for the winter.
This is the lowest November total in four years.
With less of a financial burden on households‚ customers are busy dropping heads of cabbage into their shopping carts.
"We are making kimchi with 20 heads this year -- and the cabbage prices have gone down remarkably from last year."
"We are also giving our kimchi to our children."
"Cabbage sales during kimjang season went up nearly 10 times compared to other times of the year. We sell about 5-thousand heads of cabbage a day these days -- twice as many during the weekends."
While a majority of Koreans still make their own kimchi‚ more people get by with ready-made kimchi bought straight from the market shelves‚ and younger generations tend to get their kimchi from their parents or relatives .
Making kimchi is an intense process that can take more than 24 hours‚ starting with the salting of the cabbage and maturation of kimchi seasonings the night before.
But you can also buy cabbage that's already washed‚ salted and primed for kimjang.
