Noma's staff works hard to obtain the best raw materials from the Nordic region such as Icelandic sky curd‚ halibut‚ Greenland musk ox and berries.
Noma also makes systematic use of beers and ales‚ fruit juices and fruit-based vinegars for its sauces and soups.
The restaurant truly earned its two Michelin stars‚ as it does its own smoking‚ salting‚ pickling‚ drying‚ grilling and baking.
Redzepi who is now an ambassador for the New Nordic Food program‚ has recently created a menu that includes sea urchin and dill‚ potatoes and milk‚ beef cheek and pear.
Over in France‚ Easter Sunday is near‚ which means chocolatiers get busy producing their latest sweet creations for the celebrations.
During this period for egg-hunt and other events related to tradition and religion‚ chocolate sales spike up.
More than 13-thousand tons of the sinfully sweet treats are sold.
Unfortunately for French chocolatiers‚ the civil war in Cote d'Ivore is dampening the festive atmosphere.
Cote d'Ivore is the world's biggest cocoa bean exporter‚ providing around 35 percent of the world's cocoa.
Manufacturers are doing everything within their power to provide reasonably priced chocolates‚ but if demand continues to grow and prices continue to rise‚ it's going to be a very gloomy Easter.
