The professor's name is Mun Moon-sool[문문술]‚ chef to former president Kim Dae-jung and a certified Master Craftsman Cook. Before becoming a professor‚ he spent over 5 years in the presidential kitchen at Cheong Wa Dae.

Professor of Hotel Culinary Arts‚ Seojeong University] "There are differences between traditional royal cuisine and the food served in Cheong Wa Dae. Kings were born and raised in palaces‚ whereas presidents spend their lives outside of Cheong Wa Dae and enter when they become president. You have to see them as having the same tastes as everyone else."
His reputation as a star hotel chef led to new friendshipsand a new step in his career.

Professor of Hotel Culinary Arts‚ Seojeong University] "When President Kim Dae-jung became President-elect‚ I went to his home to cook for him a few times. That was during the currency crisis‚ and George Soros was visiting Korea. I naturally got to know Lee Hui-ho‚ the First Lady-elect‚ and cooked with her. She suggested that I come to cook at Cheong Wa Dae once President Kim Dae-jung took office. I had a lot of thinking to do‚ but I ended up taking the job."
President Kim Dae-jung was fond of broths and soups‚ but he also enjoyed other delicacies.

Professor of Hotel Culinary Arts‚ Seojeong University] "President Kim Dae-jung liked deep-fried ginseng. It was one of the dishes that he thanked me for‚ saying he really enjoyed it."
Chef Moon had always taken special care to look after President Kim's health‚ particularly because of the President's age. He says that he served fried green ginseng whenever the President was fatigued or had lost his appetite.
Another specialty puts beef ribs and vegetables steamed in soy sauce inside a carved sweet pumpkin.
Last but not least is a colorful vegetable wrap that was enjoyed by many foreign emissaries to Korea.

Professor of Hotel Culinary Arts‚ Seojeong University] "I served milssam for the presidential dinner when U.S. President Clinton came to visit. It's very rewarding when a head of state really enjoys your food."
The milssam[밀쌈] vegetable wrap fulfilled the appetites of Presidents Kim Dae-jung and Bill Clinton. Milssam wraps a variety of vegetables in thin wheat pancakes. It's a simple dish‚ but it requires much work to make.
