Scientists extract lactic acid bacteria‚ also known as 'friendly bacteria‚' from kimchi‚ Korean traditional pickled cabbage‚ and vegetable juice.
This process‚ after four years of research‚ has allowed this group of Korean scientists to discover two new types of 'friendly bacteria' which offer a number of health benefits.
Having discovered that these bacteria help bolster the human immune system and reduce chances of acquiring cancer by minimizing cancer-causing substances in the intestine‚ the researchers cultured these two strains in large amounts and made it into powdered form.
It can‚ then‚ be readily used in food products‚ such as food additives.
These species double the growth of lactic acid bacteria produced at the end of the fermentation process.
[Interview : Yun Hyang-shik‚ Researcher
North Chungcheong Agricultural Research & Extension Services] "The new strains can be used in making kimchi‚ lactic acid bacteria drinks‚ internal medicine and stock feed additives."
And the team of scientists from North Chungcheong Agricultural Institute and Chungbuk National University plan to manufacture various products with the bacteria after its patent application is approved.
The discovery awaits commercialization as the global market for these products continues to increase in response to the demands of an increasingly health-conscious public.
