요약정보
December is filled with a series of year-end parties! A Korean office worker drinks 3.5 times a week on average at this time of the year.
[Interview : ] "Normally I drink once or twice a week‚ but at the end of each year that number drastically increases."
[Interview : ] "I usually party at one single place‚ but at the end of the year each party takes place at two or three more places‚ which means that I get to drink three to four times my usual amount."
When it comes to relieving hangovers‚ the most preferred food by Koreans is the haejangguk ‚ or hangover soup.
[Interview : ] "Bean sprouts soup."
[Interview : ] "Puffer fish soup."
[Interview : ] "Any spicy soup‚ like gamjatang or soondae soup."
So finding the best haejangguk is a must. Let's take a look at some of the most popular kinds of haejangguk.
[Interview : Kim So-hyeong‚ Oriental medical doctor] "The Korean word "haejang" comes from the word "haejeong‚" which refers to the act of relieving hangovers. This involves decomposing and excreting the alcohol that has accumulated inside the body. Koreans have long relieved their hangovers with dishes like "seonji haejangguk‚" "maesaengi haejangguk" and "bok haejangguk‚" all of which detoxify the liver‚ soothe the stomach‚ and alleviate the aftereffects of drinking."
In Jongno-gu‚ Seoul‚ there is a restaurant which was established in 1937‚ and is well-known among avid drinkers as having the best seonji haejangguk. Despite having moved away from the "haejangguk alley" in Cheongjin-dong in 2008‚ lunchtime still brings in a wave of diners eager to get rid of the lingering aftereffects of alcohol.
[Interview : ] "I've been coming here for seven‚ eight years now."
[Interview : ] "I started coming here about 11 years ago. A night of drinking always reminds me of this restaurant's soup‚ so I come regularly."
So what exactly is the secret behind the taste of this soup[Interview : Chae Sang-bok‚ Employee
Seonji haejangguk restaurant] "Seonji is made by mixing the cow's blood with salt and makgeolli . If it is left to sit for too long‚ then it hardens too much and doesn't taste as good. So we make it glutinous‚ which gives it a chewy texture and also makes it good for digestion."
The sticky clotted cow blood is rich in iron and protein‚ which makes it perfect for relieving hangovers. The soup is transferred into smaller pots and boiled again with bean sprouts. Place some chives on top to enhance the fragrance‚ and voila! It is ready to be served.
The restaurant has been serving this hearty dish for 73 years now.
A mouthful of the strong broth creates a longing for this unforgettable taste‚ which makes diners come back again and again.
[Interview : Kim Ik-hwan‚ Diner] "Eating this soup in the morning after a night of drinking is very effective for relieving my hangover. So I'm a regular."
[Interview : Choi Sang-gyun‚ Diner] "I can feel my stomach settling down. It's perfect for relieving hangovers."
Another popular dish for hangovers is passionately sought after by drinkers around this time of the year.
[Interview : ] "This is the best cure for hangovers."
[Interview : ] "Its taste is to die for."
The refreshing and clean taste of this stew takes away even the worst hangover.
Known as one of the four greatest delicacies in the world‚ puffer fish is low in fat‚ firm‚ and chewy.
[Interview : Byeon Wi-nan‚ Employee
Bok haejangguk restaurant] "Puffer fish contains toxins‚ so it's important to drain its blood completely. We drain the blood with our hands and soak the fish in water for over one hour to remove any leftover blood."
A puffer fish that has been carefully cleaned by an expert is placed in a pot with bean sprouts‚ white radish‚ water parsley‚ and a sauce made with crushed garlic
